Mini Easter Egg Treats

Here’s what you need:

  • 1/4 cup MCT oil, melted
  • 1 to 2 cups almond flour
  • Carob powder and beetroot juice to give them a little color

Here’s the step-by-step instructions:

#1. In a bowl, mix the MCT oil and almond flour. MCT flour is very absorbent. The amount you need will depend on what type of treat you want. Add more MCT oil for a bonbon/chocolate-like consistency, and less for a soft cookie texture.

#2. Keep the mixture white, or add a little carob powder or beetroot juice for some color. Pour it into a mini Easter egg mold and put in the fridge or freezer to set.

#3. Once set, remove from molds and join the halves together by rubbing the flat side with your finger. The heat from your finger will help melt the mixture a bit. Then just fit the two halves together.

#4. Return to freezer to set.

You can store these treats in a fridge for up to 3 days or freeze them for up to a month. This recipe makes about 20 small eggs.
